It is difficult to categorise Pembrey's food type as the menu is chalked up daily and reflects their commitment to natural flavours and fresh ingredients, prepared so as not to confuse the palate. Chef Peter takes pride and enjoyment in sourcing local produce while building up relationships with his local suppliers.

While Peter's Cordon Bleu training ensures that he sticks to the basic classic styles, the stock pot bubbles on the back of the stove and reduced sauces accompany the Bistro style Main Course dishes of Quail, Lamb Shank, Lambs' Tongue and Oxtail. The Salad Buffet is a vegetarian's delight and is constantly evolving to include Quinoa, hand-made Mozzarella and micro greens. Peter's desserts are legendary with classics like Baked Chocolate Mousse Cake and Bread and Butter Pudding being the most requested recipes. He has also churned up some wonderful ice cream combinations.

Pembrey's has attained a Platinum Award for their Wine List which reflects their great interest in wine and a very low mark-up. Familiarity with all the Wine Farms on their wine list has drawn many complements from oversea visitors. Pembrey's were again placed in the Top 100 American Express Restaurants and won Restaurant and Chef of the Year in the Garden Route.
